Mango Cheesecake

Deliciously different, this mango cheesecake has an intriguing mixture of tropical flavors like mango and coconut, complimented with a layer of oreo cookies.


Crust

1 cup graham cracker crumbs
1/2 cup crushed Oreo cookies
1/4 cup ground almonds
1/4 cup coconut flakes
1/3 cup melted butter
2 tablespoons sugar
1/2 teaspoon cinnamon

Filling

3 (8 oz.) packages cream cheese, softened
3/4 cup sugar
4 eggs
1 teaspoon vanilla
1 cup sour cream
1/2 cup mangoes, mashed (fresh or canned)
2 tablespoons orange juice

Directions

Preheat oven to 350 degrees.

How to make crust

Mix all ingredients together and press into bottom of a 9 or 10-inch spring form pan.
Bake crust 10 minutes. Cool.

Increase oven temperature to 375 degrees.

How to make filling

In a small bowl, combine cream cheese and sugar; beat until smooth.

Add eggs - one at a time.

Add vanilla, sour cream, mangoes and orange juice; mix well.

Pour filling into prepared pie crust.

Bake 10 minutes. Lower temperature to 350 degrees. Bake another 35-40 minutes, or until light golden brown.

Cool 5 hours. Refrigerate at least 5 hours before serving.
