New York Style  Cheesecake

You can serve this classic New York style cheesecake as is or with a topping of fresh berries.


Crust

4 tablespoon butter, melted
2 tablespoons sugar
1 cup graham cracker crumbs
1/2 teaspoon cinnamon

Filling

1 1/2 lbs. cream cheese
6 large eggs, separated
1 1/2 cup sugar
1 1/2 teaspoon vanilla
2 tablespoons flour
1 3/4 cup sour cream
2 teaspoons grated lemon rind
2 teaspoon lemon juice

Directions

Preheat oven to 325 degrees.

How to make crust

Combine all ingredients and press onto bottom of 10" springform pan. Chill pan in refrigerator until ready to use.

How to make filling

Combine cheese and egg yolks and beat until completely blended and smooth, make sure there are no lumps.

When cheese is smooth, add, while beating constantly, 1 cup sugar, flour, sour cream, lemon and vanilla. Beat until light and smooth.

Beat egg whites until peaks form. Beat in remaining sugar, fold, do not mix, to the cheese mixture.

Pour into pan. Bake 70 to 75 minutes. Turn off oven and let cake cool in oven with door open for one more hour. Let cool on kitchen counter. Wait for cake to cool completely before adding topping.

How to make topping

Use cherries or strawberries for topping.
