A rich, creamy, no bake cheesecake featuring your favorite peanut butter, this peanut butter cheesecake compliments any meal.
1 cup graham cracker crumbs
1/4 cup firmly packed light brown sugar
1/4 cup butter, melted
2 cup creamy peanut butter
2 cup sugar
2 (8 oz.) packages cream cheese, at room temperature
2 tablespoons melted butter
2 teaspoons vanilla
1 1/2 cups whipping cream
4 oz. semisweet chocolate
3 tablespoons, plus 2 teaspoons hot coffee
Directions
Preheat oven to 350 degrees.
In a bowl, combine crumbs, brown sugar and 1/4 cup melted butter. Press into bottom and halfway up sides of a 9-inch springform pan.
In a large bowl, with an electric mixure beat peanut butter, sugar, cream cheese, 2 tablespoons butter and vanilla; beat until smooth and creamy.
In a small bowl, beat whipping cream until soft peaks form. Fold whipped cream into peanut butter mixture. Spoon into crust.
Refrigerate 6 hours.
In a double boiler over gently simmering water, melt chocolate with coffee. Drizzle on top of filling. Refrigerate until firm.
