1 cup graham cracker crumbs
1/4 cup butter, melted
1 (11 oz.) package cream cheese, softened
2 eggs
3/4 cup sugar
1/2 teaspoon vanilla
1 container frozen strawberries, thawed
1/4 cup sugar
2 tablespoons cornstarch
1 teaspoon lemon juice
Directions
Preheat oven to 375 degrees.
How to make crust
In a bowl, mix graham cracker crumbs and 1/4 cup melted butter. Pat into an 8-inch pie pan.
How to make filling
In a bowl, combine cream cheese, eggs, 3/4 cup sugar and vanilla; blend until smooth. Pour over pie crust. Bake 20-30 minutes. Cool completely.
How to make topping
In a medium saucepan, combine 1/4 cup sugar and cornstarch. Stir in juice from frozen strawberries and 1 cup strawberries. Cook over moderate heat, stirring constantly until thick and clear. Stir in the lemon juice.
Spread topping over cheesecake. Chill thoroughly before serving.
